I would recommend to connect something like atmega8,16,32 via uart.
it has 8 ADC inputs, timers, pwm, and all the stuff needed.
also you can connect external ADC to vocore, but the price will be higher.
btw, you can implement analog output by using the pwn + lm324 ic.
and also D18B20 is a temperature sensor that is using 1-wire interface, you don't need ADC to read it.

sorry to bring back an old thread, but do you happen to know of a similar IC to the BS18B20, but that is a Hygrometer/Humidity meter?
